Unnakkaya/Coconut filled Banana Rolls- a traditional Kerala snack for tea-time

Unnakkaya /Coconut filled banana rolls is a very special snack of northern Kerala especially in Malabar, Kannur and Thalassery. This is a very special snack prepared during Ramzan and iftars( fast breaking ).This snack is very tasty and can be prepared very easily. It is prepared by filling smashed banana with grated coconut cashews,raisins and rice flakes. Unnakkaya is a good snack item that can fill the snack box and also as a evening snack.The very special taste of the  sweet coconut filling in this snack make this very tasty. Unnakkaya..

Ingredients

Cooked/Boiled banana -4
Grated coconut-1/2 cup
Chopped cashew nuts-3 tbsp
Raisins/Kismis-3tbsp
Powdered cardamon- 2 tbsp
White rice flakes- 3 Tbsp
Sugar- 4 tbsp
Seasame seeds- 3tsp
Ghee 2-3 tbsp

Method

  • Heat a pan and add 2 tbsp ghee.Saute the grated coconut for 2-3 mins.
  •  Add cashews into it and stir for some mins. Now add raisins into it and saute .Add seasame seeds, rice flakes and powdered cardamon.
  • Mix well and add sugar and mix. Saute till the mix becomes little crunchy in texture.Turn of the fire and allow to cool.
  • Meanwhile smash the cooked banana.Roll small balls and flatten it into a round shape. Fill in the mix into it and fold  and seal the ends using hand and shape.
  • Heat ghee/Oil in a pan and fry the unnakaya till golden brown.Hot and tasty Unnakaya is now ready.
  • Serve hot with tea and Enjoy!!

Notes
You can used crushed cashews or chopped cashews according to your wish.
Adjust the sweetness according to your taste.
