Super Soft & Moist Whole Wheat Carrot Cake | How to Make a Perfect Carrot Cake | Simple &Easy Recipe

A variety of dishes can be made out of carrots like carrot halwa,carrot payasam/kheer,carrot cake,carrot pudding, a wide variety of curries and many more.

Here, I am sharing a delicious and tasty carrot cake.This cake is prepared using wheat flour instead of Maida as in almost all the cake recipes. Here goes the recipes.

 

Ingredients

  • 3/4 cup grated Carrots
  • 2 Eggs
  • 2 tbsp Milk
  • 3/4 cup Sugar ( powdered)
  • 1&1/4 cup Wheat
  • 3/4 cup  Vegetable oil
  • 1 Tsp Vanilla essence
  • 1 each Cinnamon,Clove and Cardamon( powder)
  • 1/4 tsp Baking soda
  • 3/4 tsp  Baking powder

Method

  • Preheat the oven @180 degrees Celsius  10 mins before baking.Grease and line a baking tray.
  • Sift together Wheat flour, baking soda, baking powder, and powdered spices (cinnamon, clove, and cardamon)  2-3 times.
  •  Separate the Egg white and yolk. Beat egg white and yolk separately until soft and fluffy.
  • Add powdered sugar and oil into the beaten egg yolk and mix.
  • Add Vanilla essence and grated carrots into the above mix and mix well.
  • Add sifted flour little by little into the above mixture and mix well. Add milk in between.
  • Fold in the beaten egg white into the above mix.
  • Pour the batter in the prepared tray and bake until a toothpick inserted comes out clean.

You can store the cake in an airtight container for 3-4 days in the fridge.
