Banana Cupcakes

Thinking of what to do with over ripe bananas? Here goes the recipes of  an easy and simple to bake banana cup cake.This banana cup cake is prepared with maida ,baking soda,baking powder,powdered sugar,curd,vanilla essence, banana and eggs.You could also prepare this cupcake by using wheat flour instead of maida,so that it would become more healthier snack.You could use the most ripen banana to prepare this cake.

Ingredients

Banana- 1 (around cup)

Maida-1 1/4

Baking powder-1/2 tsp

Baking soda-3/4 tsp

Salt- 1/4 tsp

Powdered Sugar-1 cup

Curd-1/2 cup

Egg-1 full egg and 1 yolk

Vegetable oil-1/4 cup

Vanilla essence- 1 tsp

Milk-2 tbsp

 

Method

  • Preheat oven at 180 degrees for 10 minutes  before baking.
  • Mash banana  using a spoon or fork and keep it aside.
  • Sieve together maida,baking powder and baking soda.
  • In another bowl ,take vegetable oil,powdered sugar,salt and beat .
  • Add in curd  and mashed banana and beat .
  • Add 1 full egg and egg yolk and vanilla essence and beat
  • Add maida gradually and fold in the batter or beat at low speed.
  • Add milk if the batter is too thick to attain the correct consistency.
  • Pour the batter in the cupcake mold about three- fourth portion.
  • Bake the cupcakes at 180 degrees for 15 minutes.

Banana cupcakes is ready top up with chocolate spread  and serve.
