Cashew Balls- a Healthy Snack

Little treats for your kids snack box or as an accomplishment to serve along with a plain glass of milk in the evenings. You can also carry them and keep a box of them in your box desk for when you get super hungry at an odd time. They are healthy and delicious.

Cashew balls are small balls which are rich in nutrients,small in size but rich in energy and health.Pack your kids snack box with this  to improve their nutrient intake. Cashew nut balls is prepared using the normal rice ( or the matta rice),cashews, jaggery and coconut.The jaggery can be adjusted according to your taste preference but i would recommend to use little jaggery as high sugar level may not make this cashew balls tastier.

Here goes the recipes.

Ingredients

Rice -1 cup

Cashew nuts- 2 cup

Shredded coconut- 1/2 cup

Jaggery- as required

Cardamon powder- 1 tsp

Method

  • Wash and stain the rice and dry roast the rice in a pan without adding oil until it turns brown.The rice will become crispy and starts  crackling.Remove from flame.Allow it to cool.
  • In the same pan dry roast cashews, until they turn brown.Take care not to burn or become black.Remove from flame and allow it to cool.
  • Using a mixer grinder make a fine powder of the roasted rice.Next grind the roasted cashews.The cashews neednot become fine powder.Just pulse it 4-5 times.
  • Take a large bowl and transfer the powdered rice,cashews ,grated jaggery,cardomon powder,shredded coconut and mix using hands.Transfer the mix into the mixer grinder and pulse it 4-5 times to help it bind properly.
  • Transfer the contents into the bowl and make small balls,by pressing it tightly in your palms, shaping them like laddus.This can be stored in airtight container for 2-3 days.
  • Serve them as a snack in kids lunch box.
