Biriyani is undoubtfully the most ordered and liked rice preparations in India.Biriyani comes in many varieties as Chicken biriyani,Mutton biriyani, fish biriyani, vegetable biriyani, egg biriyani and so on….biriyani can be prepared in many ways.
A lot of variations are also found in the briyani preparations like malabar ,chettinad, hyderabadi and so on..
I got this recipes from Nalla ruchi TV show in MM tv.This is a very simple recipes and thought of sharing it .Hope you would try this very soon.
Here goes the recipes.
Ingredients
Chicken – 1/2 kg
Basmathi rice- 2 cup
Onion -2 chopped
Tomato- 2 chopped
Green chilly and Mint leaves paste- 3-4 tbsp
Curry leaves-3
Ginger garlic paste- 3-4 tsp
Dalda
Ghee- 3 tbsp
Oil
Corriander powder- 2 tbsp
Chilli powder – 2 tbsp
Turmeric powder- 1/2 tsp
cardamon- 4-5
cloves-10 nos
cinnamon- 3 pieces
Salt- to taste
Water
Method
- Wash the biriyani rice and drain of the excess water.
- Chop the onion ,tomato and keep it aside.
- Grind together green chillies and mint leaves and keep it aside.
- Melt dalda and ghee in a heavy bottom pan.Saute cinnamon,cloves ,and cardamon until they begin to sizzle.
- Add chopped oinion and curry leaves and saute till they turn transparent.
- Add ginger garlic paste into this and saute until the raw smell goes .
- Add mint leaves and green chilli paste and saute.
- Add corriander powder,Chilli powder and turmeric powder and saute till the raw smell goes.
- Add the chopped tomato and saute till it is combined properly.
- Add required salt. Add 3-4 tbsp oil into this and mix well
- Now add chicken pieces and mix properly
- Add enough water( 4 cups) and mix cover and cook and bring to boil.
- Now add the rice.
- Cover and cook till the water is completly absorbed.Check in between. Put some live coal( thee kanal) on top of the lid and cook for few minutes on low flame. check in between.
Serve hot with Salad, Pappad,Pickle and Chutney.

Instead of using live coal( Kanal) you could place a pan of boiling water on top of the lid.
