You will be delighted with the ease with which this tasty stew is made. This is a recipe for a chicken stew with vegetables like carrot, peas and potato. You could also add any vegetable of your choice.
Ingredients
Cinnamon-1
Cloves -2-3
Cardamom -2-3
Onion-2
Ginger-1
Garlic-4-5
Green chilly-5
Curry leaves- few
All purpose flour-1/3 cup
Chicken-
Carrot- 1 cup
Green peas- 1 cup
Potato-4
Vinegar- 1 tsp
Salt- as per taste
Pepper powder- 1-2 tsp
Coconut milk- ½ cup
Aniseed –few
Method
- Heat oil in a pan and saute Cinnamon, Cloves, Cardamom.
- Add to it chopped onion, ginger , garlic, green chillies and curry leaves and saute .
- Add all purpose flour when the colour of onion turns slightly brown in colour and cook for 2 minutes to remove the taste of flour.
- Add chicken pieces, carrot, green peas, potato into it and cook for 5 minutes.
- Transfer these into a pressure cooker and cook for 3 to 4 whistles or until it is cooked.
- Add coconut milk, vinegar and salt and close the lid and cook.
- Add pepper powder and aniseeds when the gravy turns to thicken and cook for 5 minutes.
- Garnish with corriander leaves and serve.
Chicken stew goes well with palappam/vellayappam,idiyappam/noolputtu, kallappam etc.
