Unnakkaya/Coconut filled Banana Rolls- A traditional Kerala snack for tea-time

Ingredients
  • Cooked/Boiled banana -4
  • Grated coconut-1/2 cup
  • Chopped cashew nuts-3 tbsp
  • Raisins/Kismis-3tbsp
  • Powdered cardamon- 2 tbsp
  • White rice flakes- 3 Tbsp
  • Sugar- 4 tbsp
  • Seasame seeds- 3tsp
  • Ghee 2-3 tbsp
Instructions
  1. Heat a pan and add 2 tbsp ghee.Saute the grated coconut for 2-3 mins.
  2. Add cashews into it and stir for some mins. Now add raisins into it and saute .Add seasame seeds, rice flakes and powdered cardamon.
  3. Mix well and add sugar and mix. Saute till the mix becomes little crunchy in texture.Turn of the fire and allow to cool.
  4. Meanwhile smash the cooked banana.Roll small balls and flatten it into a round shape. Fill in the mix into it and fold and seal the ends using hand and shape.
  5. Heat ghee/Oil in a pan and fry the unnakaya till golden brown.Hot and tasty Unnakaya is now ready.
  6. Serve hot with tea and Enjoy!!
Notes
You can used crushed cashews or chopped cashews according to your wish.
Adjust the sweetness according to your taste.
