Chocolate Coffee Cake

Ingredients
  • Maida-150 gms
  • Baking powder-1 tsp
  • Baking Soda-1 tsp
  • Salt- a pinch
  • Unsalted Butter- 150gms
  • Powdered Sugar-150gms
  • Egg- 3
  • Dark chocolate- 100gms
  • Curd- 1tsp
  • Coffee-3 tsp instant coffee powder in 15 ml  hot water
  • Vanilla essence- 2 tsp
  • Fresh cream- 1 cup
  • Chocolate - 1 cup
  • Cherries- for decorating
Instructions
  1. Preheat oven  @180 degrees for 10 minutes
  2. Prepare the tray. Use a paper towel or pastry brush to evenly spread shortening or butter (or nonstick cooking spray) on the bottom, corners, and 1 inch up the sides of the pan. Sprinkle a little flour into the pan; tap the pan so the flour covers all greased surfaces. Tap out any extra flour into the sink.Keep it aside.
  3. Melt 100 gms dark chocolate in 150 ml milk and keep it aside.
  4. Boil 15 ml water by adding 3 tsp instant coffee powder .Prepare coffee and keep it aside.
  5. Prepare chocolate gauche by heating fresh cream and add the chocolate into it.Keep it aside.
  6. In a bowl,Sieve together maida,baking soda,baking powder and salt and keep this dry ingredients  aside.
  7. Take another bowl and beat butter until soft, add powdered sugar and beat.Make sure that the butter and sugar are perfectly combined.Beat the mixture on medium speed until it is combined and has a light, fluffy texture. Scrape the bowl occasionally while beating.
  8. Break one egg into a cup; discard any shell fragments that drop into the cup. Add the egg to the butter-sugar mixture and beat well. Repeat with remaining eggs, beating well after each addition
  9. Add curd and beat.
  10. Add the melted dark chocolate mix into the mix and beat.
  11. Add the prepared coffee into the mix and beat.
  12. Add vanilla essence and beat.
  13. Add the dry ingredient mix  into the mix  gradually and mix using a spatula. and beat using a hand blender. Don't over beat  at this stage, as this can cause elongated, irregular holes in the finished cake.
  14. Pour the batter in the prepared tray and bake for 30 minutes at 180 degrees.
  15. Allow the cake to cool down before doing the topping.Pour the gauche on top of the cake and decorate with cherries.A tasty and yummy chocolate cake is ready.
