Jackfruit/chakka Kumbilappam/Chakka Appam

 

 

Kumbilappam/ chakka appam/ steamed jack fruit dumpling is a seasonal snack of kerala.It is prepared using ripe jackfruit.Koozha chakka is generally  used to make kumbilappam ,since koozha fruit is very soft and almost dissolving. You could also use varikka fruit too to make kumbilappam /chakka appams. Fresh edanailla/bay leaves/ banana leaves is used to make the packing(Kumbils).The smell of the leaves adds a different taste to the kumbilappam. It is a very simple ,tasty and healthy dish to prepare at home.

Ingredients

Ripe jackfruit pulp                              -2 cups

Melted jaggery                                   -1 1/2 cup

Grated coconut                                   – 3 cups

Rice flour                                       – 2 cups

Cumin                                            -1 tsp

Cardamon powder                                 -1 tsp

Salt                                           – apinch

Edanailla/bay leaves/banana leaves- as required

 

Method

  • Melt the jaggery and remove the impurities and keep it aside.
  • Remove the seeds of jack fruit ,and make a paste without adding water using a blender or mixer.
  • Now combine together the jackfruit pulp,melted jaggery,powdered cardamon,cumin ,grated coconut and salt.
  • Mix well using hand .Add rice flour little by little to make smooth dough.The dough shouldn’t be too loose or too tight.
  • Take edanailla/ banana leaves and make cones and fill the dough into it.If needed pin it using tooth pick or stick of coconut leaves.Cover the cone using the upper edge of the leaves.
  • Steam it around 30 – 35 mins.

Serve  hot.
