Kootu Theeyal

This is a very special theeyal prepared using bitter guard ,elephant yam(chena) and shallots.This can be served as a special dish for sadhyas as well.Do try this .Its very easy to prepare.Instead of having the same dishes during the meals ,Do try this special recipes today itself and win the appreciation of your loved ones.

Ingredients

Shallots -1/4kg
Elephant yam- 1/4 kg
Bitter guard-1 (small)
Coconut oil-3 tbsp
Tamarind- 1 lemon sized
Turmeric powder-1/2 tsp
Salt- as per taste
Coriander- 3 spoon
Red chilly- 6 nos
Grated coconut -1 cup

For Garnishing
Oil- 3 tbsp
Mustard seeds-1 tbsp
Red chilly -3 nos

Method

  • Cut the shallots and bitter guard into tiny thin pieces and saute in coconut oil.
  • Cut the chena pieces into tiny thin pieces
  • Cook the chena along with the sauted bitterguard and shallots. Add the tamarind juice and salt into this and mix well.
  • Heat oil in a pan and fry the coriander and red chilly and keep it aside.Fry the grated coconut in the same pan till it turns golden brown. allow it to cool.
  • Grind hte fried coconut,coriander and red chilly to get a fine paste.
  • Add this to the cooked pieces and allow it to boil.Then turn off the fire.
  • Heat oil in a pan and splutter mustard seeds and when it crackle add red chilly and spread it on top of the curry .
  • Serve this special theeyal with rice. Isn’t it delicious !!!
