Plum cakes are made of either dried fruits like grapes, currants, raisins or prunes or with fresh fruits depending on one’s taste and Preferences. You could also bake this cake in a disposable cake tin and can wrap in and gift your loved ones. Dry fruits are usually soaked in Rum, wine, orange juice, grape juice and so on. The longer you soak your dry fruits, the more flavourful it will. You can soak the dry fruits for 1 – 4 weeks before you bake the cake. If you prefer to soak in fresh juice you need not keep it for long, it may need a maximum of days soaking. Remember to store the dry fruits in the fridge if you are soaking in fresh juice.

Ingredients
Maida-1&1/2 cup
- Soak Dates, raisins, cherries,&tutty fruity in orange juice for 1/2 hour.
- Caramelise sugar: Take a heavy bottom pan and add 1/2 cup sugar. Stir continuously. Lower the flame when the sugar starts to dissolve. Stir continuously and add in 1 cup hot water, when you get a coffee brown color. Caution: keep distance when you add the hot water, it may burst and you may get burnt. Allow the solution to boil until you get a thick consistency or when it halves. keep it aside to cool.
- Separate egg whites and yolk.
- Best the whites till you get a soapy texture. keep it aside.
- Now beat the yolks and add in powdered sugar, vegetable oil, orange zest, vanilla essences, and caramel syrup and beat until it is fully mixed.
- Now sieve together maida, baking soda, baking powder, and spice powders and gradually fold in the dry ingredients into the egg yolk mixture using a spatula. fold only in one direction without forming any lumps.
- Add the soaked dry fruits and fold. Add chopped cashews and fold
- Fold the egg whites into the mix by two times.
- Pour the batter in the prepared tin. Tap the tin 2 to 3 times to release air bubbles. Arrange some cashews on top and bake in preheated oven at 180 degrees for 40mins or until a toothpick inserted comes out clean.
