Potato Egg masala is a very common dish that goes well with palapam,kallapam, ediapam,chapati and other roti items.Preparation is very easy,and could be prepared without consuming much of your time . Ingredients
Boiled egg -4 (halved)
Potato- (cooked and cubed)
Onion- 2 big (sliced)
Green chilly- 2
Ginger-1tbsp
Garlic- 1 tbsp
Corriander powder- 2 tbsp
Chilli powder- 1tbsp
Turmeric powder- 1/4 tbsp
Garam masala powder- 1/2 tbsp
Curry leaves- few
Oil
Coconut milk- 1/2 cup
Method
- Heat oil in a pan and saute ginger, garlic,green chilly and onion.
- Add little salt and saute till it turns golden brown.
- Lower the flame and add the masalas one by oneĀ coriander powder,Chilli powder,turmeric powder, and garam masala .
- Add little water and mix well
- Dump the potatoes into it and mix well. Add little water .
- Cover with the lid and cook for some time till the potatoes are cooked.
- Now dump the boiled eggs into it. Rotate the pan so that egg will not break.
- Add coconut milk and turn off the flame when it starts to boil.
Notes
You could add tomato to get a different taste. If you don’t want to chew the ginger garlic slices then you could also use ginger garlic paste .
