Bake up a sweet teat with Red Velvet cake with Cream Cheese Frosting.Here goes the recipes..
Ingredients
Maida- 2 1/4 cup
Coco powder-4 tbs
Powdered sugar-1 3/4 cup
Baking soda- 1 tsp
Salt – a pinch
Egg- 2
Refined oil-1 1/4cup
Vanilla essence-1 tsp
Red food colour- as required
Butter milk-1 cup
Vinegar-2 tsp
Cream Frosting Ingredients
Cream cheese- 450gms
Butter- 100gm
Icing sugar- 2 21/2 cup
Vanilla essence- 1 tsp
Method
- Preheat oven to 190 degrees 10 minutes before baking.Butter 3 round shape cake tins and set aside.
- In a bowl sift together Maida,coco powder,powdered sugar, 1 tsp baking powder and salt.Set aside.
- In a bowl, with a hand mixer,beat eggs . Add vegetable oil and beat.Scrape down the sides of the bowl and beat.
- Add buttermilk,vanilla essence and food colour. Mix until everything is well incorporated.
- With the mixer on low speed add the flour mixture in 3 additions.
- In a bowl mix vinegar and baking soda.Allow the mixture to fizz and slowly fold into the batter.
- Divide the batter evenly between three prepared pans and smooth the tops with spatula.
- Bake the cake in the preheated oven for approximately 40- 50 minutes. or until a toothpick inserted at the center comes out clean.
- Cool the cakes in their pans.Place a wire rack on top of the cake pan and invert , lifting off the pan.Place the cake layers in refrigerator for atleast one hour to make the frosting easier.
- Cream cheese frosting: Beat together butter and cream cheese using blender until smooth.Add vanilla essence and icing sugarand beat until smooth.
- Place one of the cake layers ,top of the cake facing down onto the serving platter, spread the cake layer with the frosting.Place another layer of cake on top of frosting and continue to frost.Frost the top and sides of the cake.
Red velvet cake with cream cheese frosting is now ready to serve.
