Uzhunnu Vada

Uzhunnu vada is a popular south Indian snack. It is usually served along with masala dosa or idli in hotels along with sambhar and chutney.

Uzhunnu is very nutritious and is very good for children as well as adults. Uzhunnu vada requires only a handful of ingredients that are always in stock at homes. Some use baking soda, in order to get crispier vadas but I usually do not use it.

IngredientsUzhunnu Vada

Uzhunnu/ black gram/ urad dal -1 cup
Chopped onion- 1\2 cup
Chopped ginger- 1 inch piece
Chopped green chilies -3-4
Black pepper powder- 1 TSP
Curry leaves- 1 sprig
Salt- to taste
Oil – for deep frying

Method

• Soak the uzhunnu for 5-6 hrs.
• Clean and drain the water and grind it without adding water. If its too difficult to grind them in that case sprinkle litter water.
• Mix the chopped items, salt and pepper powder.mix well.
• The batter should be thick. Leave it aside for around 15-20mins.
• Heat oil in a pan.
• Wet the palm of your hands and take little of the batter and make it in round shape and make a hole at the middle by your finger in order to get the shape of uzhunnu vada.
• Drop it in hot oil very carefully without dipping your hand in oil.
• Deep fry it in oil. Turn the side of uzhunnu vada when it turns light brown. Don’t allow it to burn.
• Drain the excess oil by using tissue paper.
• Repeat the process. you could make 4 to 5 vadas at a time.

Notes

Make small vadas so that you could ensure that it is cooked well. If the batter is loose then add little rice flour in order to make it hard.
