Kichadi is a common dish in most of the sadhyas. Kichadi can be prepared using vegetables like cucumber,bitter guard,Ladies finger/Vendakka and so on.Here is the recipes of Kichadi using cucumber. This is a very simple side dish using cucumber,curd and coconut.
Ingredients:
Cucumber (cut into very small pieces) – 2 cups
Curd (not sour) – 1 cup
Grated coconut- ½ cup
Green chillies (cut into small round pieces) – 3
Small onions – 2
Cumin seeds- ½ tsp
Mustard seeds- ½ tsp
Curry leaves
Salt
Method
Peel the skin and remove the seeds of cucumber and cut into cubes. Cook the cucumber by adding little water, chillies ,salt and curry leaves until it becomes soft.
Meanwhile, Grind together the grated coconut, small onions and cumin seeds. Add crushed mustard seeds to it and mix well.
Now,add the ground coconut paste and cook on low flame for 2- 3 min and remove from flame.
Season with spluttered mustard seeds, red chillies and curry leaves.
After the mixture is cooled, add curd and mix well.
Now ,Enjoy this simple and delicious dish with rice.

- After the mixture is cooled, add curd and mix well.
